Sup fellow Belgian. I recommend Georgia, been there twice, high Caucasus scenery is beyond awesome. Cheap flights available, cheap but accessible country. Pic related.

But I have to say Romania isn't bad either. Did some hiking in the Făgăraș, and Romanian hiking infrastructure - waymarking, cabins, routes etc - is world class. Iron curtain meant Romanians spent most holidays in Romania, which led to the development of a massive hiking infrastructure.

...but, truth be told, the most drop-dead gorgeous mountainous area I've ever seen is the Russian Caucasus. Somewhat less accessible and fewer people speak English.

Closer to home, the Dolomites are wonderful, as are the French and Swiss Alps, but I haven't visited those in fifteen years - no pictures. Probably the most expensive and touristy of the places I've listed, but worth visiting nonetheless.
Bonus pic from Georgia.
Norway is beautiful and there is a lot of the country to see, you will want a car there but it is not so long to drive there for you
Out of the countries I've gone /out/doors in, here are my top 5:
-New Zealand
-Scotland
-Morocco
-Oman
-Spain
though as an American I'm biased against my own continent.
