I've recently taken up Walking in my spare time and also to take more photos
i currently don't have alot of equipment, only a cheap pair of walking shoes and a 3 in 1 jacket.
What would you recommend as a big investment into the gear side of things, boots/backpacks etc

Boots - water resistant (if not completely water proof) with ankle support
Knife - an entry level folder is enough for now
Monopod - not as good as a trekking pole or tripod, but it serves both purposes
I'm assuming you already have a camera case, if you're just doing day hikes you shouldn't need something bigger than the average camera bag to carry extra lenses and water.

Sounds like you're all set.
Unless you are actually having a problem that gear can fix, like shin splints from shitty shoes or too cold/hot/wet, buying gear won't make walking any more enjoyable.

I never got the point of poles. If I really need a stick for something I can just pick one up off the ground.

I only find them worth the weight when backpacking. You can go crazy fast using two poles, even with a heavy pack.
