I am going to start stacking supplies. What should I hoard? What should I avoid? What foods never go off? What other stuff should one be stocking?

My list so far:
pasta
rice
honey
peanut butter
dried beans
vitamine pills
hard liquor
coal and firewood for the oven
maybe a solar panel charger
hygiene articles

Don't think so hard about it. In an emergency you want food that you'll actually enjoy eating, because the biggest issue you'll have is stress. Don't purchase food that you won't eat; it's not calories if it stays on the shelf. Go over the list of food that you'd normally buy every month. Anything that'll last more than six months without refrigeration is what you want, especially stuff that can be eaten without cooking. Constantly cycle through it so you always use the oldest stuff first; that way your long term storage is always as fresh as it can possibly be.

I have Spam, chili, canned soup (not concentrate), canned pasta, cereal & powdered milk (though I don't cycle milk, I toss it), peanut butter, Nutella, graham crackers, cookies, candy bars, etc.

Only the powdered milk and the cases of bottled water are in there specifically for emergencies, everything else isn't "survival food" its just survival quantities of normal food.
