But my beard gets curly like a mofo when it grows longer so I buzz the cheeks and the neck too. So basically I got a massive stache+goatee.
Since I work home office I let the buzzed parts grow and only cut them every other weekend.
OP avoiding sunburn is easy: wear a fucking hat or cap or boonie. Also soaks up the sweat that will run into your eyes when you dont have much hair on top.

I let my head hair grow for about 8 months without a cut. It got to about my lips, but only looked decent when i went a day without washing it. Other wise it was too poofy and didnt look very good. How ever it looked pretty fantastic when it got wet(like rain or pouring water on my head).
as for facial hair, only my side burns really grow. So i end up with a pair of mutton chops and they really dont work that well with the shitty neck beard that wont thicken.

It literally makes no difference. Just wear what you like, maintaining hair in the outdoors is not really different from maintaining it in the everyday life. I mean of course if you don't have some hyper complicated hairstyle that needs washing and trimming your hair 24/7 or something.
Now I have relatively short hair but I used to have an undercut in the last 2 years and it really didn't matter anything, sometimes I brought my wax to hiking and applied it in the mornings because I simply felt like it, it's not like I was going to wiggle in mud and dirt. Same with my long hair 4-5 years ago, I just tied it back and was done with it.
No need to make a big fuss about it.
