I'm looking for a jacket like this but with a light water proof shell on the outside.

I'd recommend buying your insulation and water proofing separately. I have an eVent rain jacket and then can choose what to wear underneath depending on the forecast. Also can stay dry from the rain and dry from sweat if I get to hot.

That looks good. Something to consider about fleece is that it has to stay dry to stay effective. Also, it's not going to pack small and will take up a lot of space in your pack.
