I listen to field recordings while I hike.
Nick Drake gets me in the /out/ mood perfectly, but I try not to abuse his music because I don't want to wear it out. Other more modern folk like Fleet Foxes, Father John Misty, Sun Kil Moon. Neo-folk also, Di6, Current 93, the list goes on. And Wolves in the Throne Room.

I don't listen to music when out. with how many people let their untrained dogs run free around here or race downhill on mountain bikes, giving up my hearing would be far to risky.
the only exception would be during night hikes where I sometimes sing to keep boars and lynxes away, as I have in the past encountered wild animals several times without noticing them or them noticing me until I was within arms reach and don't want to have to kill one of the few lynxes in the area if I can help it. If they notice humans at a distance, they'll generally flee, but if you get to close, they might attack. In that case, I sing whatever songs I know by heart, which normally ends up a mixture of german nationalist poems and heavy metal.
As for music related to outdoors activities: obviously Jännerwein, Darkwood and other Neofolk bands, though I doubt that they're known outside of the german speaking countries.

I listen to other stuff of course, but definitely have a soft spot for old country blues, old times, blue grass. Carter Family, the Poplin Family, Woodie Guthrie, Elizabeth Cotten, Jimmie Driftwood, Roscoe Holcomb, Frank Proffitt, Wade Mainer (very chuchy for an atheist like me, but I like his style).
