NYS forests allow you to primitive camp up to 3 days, longer than that and they want you to get a permit first. Just beware of hunting seasons.

Only camp below 3500' and 150' (30 2-step paces) from the trail or water source. Fires are permitted, but be sure to clear the area about 10' around it of debris, and break up your stone fire ring; and make sure your fire is COLD out before you leave.

Try the Santanoni range, this mountain range is one of the less hiked of the Adirondack and there is no real trail to get to the top. I spent the night there and never saw a soul.
