G'day,
I know basic survival tips, but I need to learn more.
Next year I'm hoping to go for a two month hike deep into the blue mountains (Aus).

Depending on the time of year it'll either be snowing or just wet and cold. There should be plenty of water availability but food may be an issue. Set up your tent in semi sheltered locations because the wind picks up like a bitch.
Remember the rule of threes if in a shitty situation.

Bring an empty water bottle to piss in at night. It will keep you warm as well as prevent you from going outside in freezing rain/snow at 2am.

You can build it on top of snow, but it takes some doing.

Firstly, obviously it will continue to melt down, digging a hole. For this reason it's bad for heat generation since most of the heat is absorbed by the walls of the hole.

Second, the dampness of the hole causes obvious problems. You can't have a coal bed, for instance. The fire will not get as hot as it needs to be to stay warm throughout the night.

Third, you will constantly be fighting to keep it aflame. The lack of oxygen in the pit will require a Dakota fire hole. The increased moisture will make it difficult to catch new fuel.

I've found that starting a fire like OP's pic works, and then jamming fuel into the sides of the hole wall works great. Keep the bottom of the fire 1/3 of the way to the top of the hole. Create an air vent at the bottom. Add fuel from the top, support it on the sides no lower than halfway down.
