I just bought this 8.5 ft kayak and was wondering if i could use it for the lake. Also wondering if i could fish in it.

that's the advantage of a canoe. it's more adaptable. you can put 1-4 people in it and varying amount of stuff. if all you want is to be out on the water and you have a kayak, go for it

im not OP but im interested in paddling. i live in south Florida, lots of mangrove swamps and brackish rivers. would a kayak or canoe be better?
I tried using my whitewater kayak in placid lake a few years ago thinking everything would be fine.
No problems for the first few hours but I had to paddle quickly back to shore after that and my kayak was pretty much ruined

It will be a bitch to steer, you need to add a fin to the bottom otherwise you are going to hate yourself every minute you are out on the water
