I have a 2003 350z touring edition with about 85k miles. It's been consuming oil since my stepdad bought it brand new all those years ago. Every thousand miles or so I have to top it off. Would an oil cooling system help this issue? I've been considering getting one since I'm moving to vegas in a couple months and I'm worried the 100+ degree heat will amplify this issue.
Nah it'll just make your oil capacity bigger. More shit to go wrong.
Cars by design use oil. You can minimise it by making the second number bigger. Say, if you're using a 5w30 go up to a 5w40.
High temperatures and that sorta mileage id stay well clear of a 5w30.

Oil consumption is a typical issue with the early VQ35DE engines my friend. They fixed this issue with the VQDE HR engine a couple years later.

10w50 in my old mx5 has about halved the consumption. 15w60 in summer. Gets a good wringing once a fortnight or so.

Use a selfie stick and take a few pictures underneath the car. If it is not oily from leaks, then it is the "as expected" oil consumption mentioned in >>17859326 . If you have oil leaks, then try using the high mileage synthetic version of the recommended weight of oil in your owner manual. The cheapest source is the 5 quart jugs at walmart. It should say "High Mileage" on the label. Those oils have an additive that causes seals to swell a little bit to reduce oil leaks from older worn seals.
Another source of oil consumption is a bad PCV valve. That can cause as much as a quart per 500 miles of oil consumption but that much in any 2003 car would have triggered a code. And you'd smell dirty exhaust. If your exhaust is clean smelling, then it's just the as-expected oil consumption of that particular engine model.
