Are you saying I should have $1k put aside just in case if something were to go wrong? if so yes. Also even though I want to work on it myself, if I were to run into problems i have a few euro indy shops in my city.
Also FCP Euro is based in my city as well so that helps a lot.

i have an SL500 from 2002 and while mine aren't leaking (yet) the car will lower when standing still for 2-3 days because the fluid inside the shocks flows back into the reservoir

You're a retard. You can re-seal the valve blocks completely (that's what's leaking, not the struts) for $100 a piece in seals, and that's still overpriced.
Now leaking shocks are a different matter but so long as you keep the fluid fresh they should last for a long time.

W123 don't use air shocks. At least my dads '77 300D doesn't. They use regular coil springs.
