What car do you think would be a good candidate for a Chebby v8 swap for a beginner at wrenching?

I'm looking for something I can make into a simple and stripped out hoonmobile.

I was thinking maybe an old Datsun or Porsche 944 but open to suggestions:

>manual, no less than 5spd
>irs, or at least no live axle
>no convertibles
>$3000 or less for the car itself
