Is it ok to fill up with gas when your tank is over half full? I have a car I only drive on weekends and usually I'll fill it up on Friday regardless of how much fuel it has. Usually it's 3/4 full but I still fill up. Should I run it to empty to keep the gas fresh? Will topping off old gas cause the gas to degrade and hurt my car? Does gas spoil like food?
Gas does spoil, but I've seen cars run fine on pure gas that had sat for nearly two years
I wouldn't be worried - you keep topping it up with fresh petrol, and I wouldn't think you'll ever reach the point where the octane has dropped low enough to cause ignition trouble

Would it make a difference if it's a high octane car? I use shell premium because the car is a 6.4 L Challenger. I just worry about stuff like this because I plan on keeping the car a very long time.
As others have said, you should be fine. Maybe skip one Friday a month to get the tank down to 1/8 or less, then fill up. And/or add some sta-bil or similar if you want. I only drive my car 1-2 times a month in the summer, and I add fuel stabilizer before letting it sit, and have had no problems.
