Am I doing any damage to my bike if I almost never use first gear? It starts fine from stopped in 2nd and first gear caps out at like 5 mph so what's the point

A 500 should be capping out at at least 20-30 so something is either wrong with your bike or you're the problem. And yes, it'll wear your clutch faster than usual cause it'll start to slip from the torque needed to ride in second that usually comes from an already moving bike and will stall out more easily when pulling out from a stop.

I'm not sure about bikes, but a lot of trucks start out in second gear. First is usually just a granny gear, unless you are driving a low power shitbox with a tiny clutch.
