Sure there are some out these that are a bit shit when it comes to offroad (VFR1200X for example), but loads of the modern adventure bikes are superb off road, they just rarely get used for it. I've seen GS's, Africa Twins, Teneres etc ridden hard like motocross bikes over jumps and rough terrain like nobodies business.

The amount of "turning" you do shouldn't be something you think about. Try this:
Before entering the corner, move to the outer third of the lane.
When you enter the corner, adjust your body position but keep going straight. Turn your head and look through the corner; estimate where the apex is.
When you can see the apex, fixate a point just behind it (on the inner edge of the corner). Will yourself towards it. You'll go there. Before you reach it, shift your focus to the corner exit.
