I've always wanted to find the cheapest suzuki gs, or really any bike from the 70s or early 80s to make into a cafe. Only issue is 1, I'll end up fabricating and replacing much of the frame for safety issues, and 2, I will most likely end up wanting a completely new drive train so I can actually go fast, 70s bikes barely break 60mph in my experience.
Any bike, all you need is a little bit of vision.

Real cafe racers were honest to god cobbled together race bikes that existed solely because nobody was selling factory racers at the time. The point was to make your bike faster. And, like modern squids, cafe racers never strayed too far from their local coffee shop and didn't use so much as half their rear tire.
if you're just chopping shit off and making it lighter/personalized, you're making a bobber, and yes, it's still a bobber if it's not based on a cruiser.
