Your engine is a glorified air pump. The camshaft is the control system: it determines when and how air is pumped. If the camshaft is the bottleneck in this sytem, upgrading it can make for easy horsepower gains, though usually at the expensive of peak torque, idle quality and powerband width. However, it might not be the bottleneck in the system: usually, that's a toss-up between heads, intake, exhaust and cam.

Depending on the cam (and your specific engine), up to 70hp. Be prepared to miss out on some bottom end torque though - not what you'd want if it's in a big truck or SUV.

I'd personally recommend a factory cam like they tested in the article, since those will be pretty good for pretty cheap. Just search some forums for them.
If you want a brand new cam (probably not worth the money given your specific truck), just go to summit racing and have it delivered at your door. Search forums if you want to know more about specific cam models.

Wouldn't a factory one already be in there?

Gmt800s are basically the same thing but less fat, and early ones weren't drive by wire

The factory has made something like 20 different LS cams. Again, go read the article: http://www.hotrod.com/articles/ls-cam-test-comparison/
Some were made for 4.8's, several for 5.3's, then there's 5.7, 6.0, 6.2, 7.0, and supercharged applications, different levels of output, and all of those came with a unique cam grind. You can take a torquey 5.3 cam (like you have) and replace it with a racey cam from an LS7 (7.0L), and end up with less torque but about 70 horsepower. Since people with those big engines are usually swapping aftermarket cams in, you might be able to find a cheap deal online by swapping in a bigger cam from a factory motor. It'll still improve performance in your 5.3, but it will be several times cheaper than a completely new unit.

Right on mines a single cab so it's not as heavy, probably going with a summit racing one
