recently there has come to light a really good deal on 18650 cells, cheap enough that getting 30kilowatts of them which is about 100 miles of ev range will only set you back like $5000, which is damn cheap
so what kinds of classics cars meet these criteria

>enough body cavity space to install 200 fist-sized cells are wired together, the packs can be all kinds of sizes and shapes to fit into crevices
>enough aftermarket and community support that i can probably get bits i need easily and get questions answered in a reasonable timescale
>relatively lightweight body since these cells will be heavy af no matter what

Getting all the cells is the least of your worries, building/programming a BMS is very difficult, plus all the fabrication and wiring of the pack, cooling, etc. you are looking at tons of work and you aren't going to find any guide to do it on the internet

nissan leafs are losing charge but mostly because they don't cool their cells very well and the software to block from overcharging and undercurrent is pretty lousy
