Because the series that host Ferrari race cars don't allow all-wheel-drive. And all of Ferrari features (steering-mounted performance controls, MR platform, stability management programs, hybrid technology, turbo technology, etc etc) are all found in their race cars.

The only reason they have one AWD car (that is barely even AWD, it's just a separate gearbox that disengages under several circumstances) is because rich bastards want V12 fun in the snow.
