Go buy a manual E36
If you can wrench and aren't retarded, they are pretty easy to own. Not much else you will find that is "fun" for that cheap. Maybe Foxbody or old Camaro too but e36 will probably be more fun stock.

If you only have $2k then a Miata is your only real "fun" option. Get one.
6'2" 220lbs is not too large for a Miata. Pretty much anyone under six and a half feet (who isn't obese) can drive a Miata just fine.
