How would I signal legally with the roof up? Mirroring what it says in the Highway Code comes to mind, but I could see that being pretty confusing. It does say "CAUTION LEFT HAND DRIVE - NO SIGNALS" on the back, but I'm skeptical of its legality these days.
Wat do?

Don't signal. It's not like everyone does it anyway.
Also, post the Willys
Buy a deactivated M1 Garand and tie a Friedom flag to the end.

Doesn't something like this come under a grandfather rule such as seatbelts, whatever was okay back then should still be fine?

Yes, it's legal if it was legally registered in the past. Doesn't mean it's a good idea to take it on the freeway today.

It will be legal
Cars that are 50 years old don't need MOTs so you're fine
Even then, I doubt many people know their hand signals these days. I don't remember it being covered in the theory test

Add signals?
Get some LED signals. Mount them in such a manner as not to permanently alter/damage the original vehicle body.

I'm pretty sure indicators are not part of the MOT. You will have to add a rear fog light though if it doesn't have one.

Stick your arm out, use the signals that way.
Or just put some indicators on a board and sling them over the tailgate. Hook it up to a switch on the dashboard.
You can make it removable if you're anal about authenticity.
The ghetto solution would be a trailer board with a switch wired into it.

I think it's one of those vehicles that should have them retrofitted because of the whole 'no doors' thing. At least a lap belt to keep you inside if you hit a speed bump.

They are if the vehicle has them, IIRC.
