That's not how you conserve gas. You ride smooth using your torque wisely to high speed, then coast, revving to nurse the driveshaft. Sometimes I cruise control, but mostly I like to drift between 5 mph then open it up when it's safe.

Probably the flathead v8. Horsepower is not the greatest but they will run forever and can be rebuilt and repaired easily and cheaply.

The coyote 5.0 is also a very good engine because of how tunable it is and how much potential is still available with the stock parts. 1.39 hp per cubic inch and 1.32 lb ft of torque per cubic inch while meeting emissions standards on pump gas on a production naturally aspirated engine that will run 500k miles is impressive

Probably not the "best", but I like the MZR family of engines from Mazda/Ford. I've owned 5 cars with these type of engines, never disappointed.

On mobile right now, can anybody show this guy the difference between a 5.0 Windsor and a 5.0 Mod motor? Fyi, you can fit a big block Ford into a late first gen Mustang. Putting a DOHC Modular in that very same engine bay is a pain in the ass. Packaging DOHC V motors is a lot worse than their pushrod equivalent. You're right about inline engines, but those are worse than V's in weight distribution when they're more than 4 cilinders long.

Actually, pushrod engines can get much better MPG because of the easy implementation of VVT, variable displacement and direct injection.

2v heads don't have better flow for a given bore size, there just aren't any DOHC 4v heads made that have bore sizes larger than 4 inches, and all of those are factory castings which have to meet be both economical and have good low lift flow compared to aftermarket castings targeting the performance/race market.
