Looking for niche manual cars under 7k that people would recommend. Stuff you don't see on the road often or is so niche that you can pick them up for dirt cheap because no one knows about them.

urs4/urs6. Manual only turbocharged AWD. Can readily pick them up for $3500 in pretty damn good shape. $5k for a mint stock example. Up to 10k for a heavily modded.

If you can find one, I recommend a second gen Legacy. Most are autotragics but this car is so fun to drive, and handles very neutrally with a strut tower brace up front, a junkyard Outback rear sway bar (2mm larger) and whiteline end links all the way around. It's very easy to dorifuto in the rain too, the back comes right out. Picked mine up for $1800, but I've dumped at least double that into it.

Yurop here, I've seen autos for sale as well. They should be avoided though, the manuals are much stronger (the autos all shit themselves around 240k km/150k miles).
The rarest, even moreso as a manual. Even finding a clean running one in Europe would be hard now.

I'm not sure about other places but e36s are starting to become more rare where I live. M52 inline 6 doesn't sound too bad and handles pretty well. You can pick up a manual version for a good price.
