Why do V6's sound like shit?

Only newer ones do, give a listen to the 2.8 they put in Fieros and Camaros.

Depend on the manufacturer, some alfa v6 sound good.

there are 3 cylinders per side to balance. therefore 2 cylinders are always mid crank on one hemisphere while 1 is on the other side.

This is actually a good thing because it means there is always a throw from the cylinder doing work, and sometimes they overlap and for a short moment 2 cylinders are doing work at once.

The V6 is a beautiful engine.

I have a 4th gen maxima with a vq30. Without deleting any cats and running a 2.25" straight pipe, its plenty loud without being unbearable. Cabin drone is basically non-existent as well. Gets loud as fuck when you get on it though. Crackles and pops plenty when engine braking about 1.5k rpms

Best sounding v6 IMO is a Detroit Diesel 6v92t (turbo). They sound great at full throttle where they're made to constantly run at.
