So me and two friends want to roadtrip down though Mexico over spring break, whats a good cheap car to buy for the trip? In theory we could do a little off roading but it's not necessary. I don't think our budget would be more than a couple thousand dollars. Maybe it's better to buy two cars in case one breaks down (and we need to get parts)? Should probably note that I'm the only that has actually worked on a car before.

I would say Ford explorer 10-20 years old when it was on the ranger platform. Rangers and explorers are everywhere down there so parts availability will be no problem. They are also reliable vehicles assuming you maintain them properly and can do easy off roading .
Not too flashy, and won't have to worry about theft.
Big enough to sleep in the back to save cost if you need to.
Source: did a road trip from California to Mexico city and back.
Buy an Econoline Ford E series box van.
