Are manual transmissions available in electric cars? Are they possible? Would you buy a manual electric shitbox/sports car?
that wouldnt work and it would be a stupid thing to try and emulate

I know the crz hybrid has a stick shift option. I didn't know pure EV's even used traditional transmissions, I thought that were CVT
BUT, I've never payed much attention to them

Why would you want one, it would be pointless.

most actual electric drive vehicles are direct drive... they have no technical need for a gearbox.
hybrids have CVTs often but they still power the wheels with the engine.

I might be retarded but wouldn't a purely electric vehicle modify it's speed by altering the strength of it's motors field?
I mean, an electric motor will generate 100% of it's possible torque when ever it's powered so wouldn't varying the speed of whatever it's powering(drive axel) come down to weakening/strengthening it's field to decrease/increase it's RPMs?

it's been done before, usually with EV conversions.
As to sports cars, something that's really popular now is buying a Factory Five 818, buying a N/A Subaru Impreza donor for steering rack/suspension/transaxle parts, and then using an electric motor into the transmission. The 818 kit car was designed to use the powerplant from a Subaru Impreza in an MR configuration as a way to launch Factory Five globally since Impreza parts cars are literally everywhere.
They're neat. Literally no need for a clutch pedal and you can shift while never taking your foot off the accelerator.

There was recently one built using a Tesla motor, and batteries from a Chevy Volt.

Might be possible. Electric motors beat the fuck out drive trains though. This E36 on /drive fucked up a powerglide. Apparantly 850ft-lbs of torque at 0 RPM is a little hard on trannies.

ive had an idea for a while of a virtual gearbox using a motor controller to change voltages and amperage to simulate gears, more volts less amps is a higher gear, the opposite is a lower gear

One day I want to be able to drive any electric car with my racing sim setup and shift gears digitally

that's essentially what it'd be yeah
