7.5" will be fine. I'm pretty sure lots of people fit 8" will fit with zero modification or rubbing.

That's one of the reasons I'm keen to try my old 16x6.5 stock WRX wheels with light but surprisingly decent all-seasons. They're much lighter and vs. the stock 17" should have a little more cushion for that around town duty.
To bad it's going to look a little dopey, but hey rather have those fight off the potholes as a day job anyway.
