Coolant temp
Can't remember what else. Only had one 96+ and that was a while ago.

A tech with something like CONSULT II/III/III+ can do just about anything

YES. Check this this recent past /o/ thread for info about real time data displays of your car's data. There's no need to buy expensive standalone test equipment unless your car's instrumentation is faulty.
Bluetooth communicates with android apps in either a tablet (nice bigger display) or smartphones.

My car comes with a coolant temperature gauge that resolutely stays centred and 'normal' until long after it's reached a water temperature where the chamber seals will start to cook.
It's absolutely a helpful thing to have because it shows the actual coolant temperature rather than a lie.
LTFT is a good indicator of problems with the engine that the ECU is tuning out. Subtle shit like air leaks, or possible shit compression.
Cat temps over 1400C are signs that omething amusing is happening. If the rooster tail of sparks out both pipes weren't the same....
