You could take advantage of a fairly lenient import laws there and do some hunting around overseas. US cars tend to be shitheaps because yanks treat them like crap, but an older 1st-2nd gen Camaro with a 6 in it might be cheap-ish, they are wronghand drive though which is annoying for overtaking
UK has a lot of cars pretty cheap too, few other options there for hottie Escorts, Capri's and stuff. Heck even an old jag with the engine + electricals thrown away and a modern V8 in them can be kind of fun. All the Aussie ones are getting really expensive and don't seem to be slowing down

I'd advise to steer clear of 'classic' cars anyway since they are unreliable overpriced turds with limited parts 99% of the time.
Late 80's to early 00's cars are under rated as fuck.
Just because they are more common isnt a bad thing either, more parts, easier to fix.
Easiest thing you can do is get an I6 HZ, HQ, and swap a 308 or 350 in. Anything going cheap will be a wreck.
You've got welding skills though, and there a lot of repair panels you can buy for these cars so it shouldn't be too difficult for someone like you.

Vk-vl commodores are still cheap enough at the moment, and a 304 conversion one of those is easy as because they used all the same front crossmembers and shit the whole way thru.

Same guy again. When I say the cheap ones are wrecks I'm not joking.
I picked this up for 6k, swapped a new body onto it because the old one was horribly rusty and made of body filler.
This one is better, but they really bodged it. I've pic related is the rear sill, which looked alright until I hit it with the grinder and found out that they had tried repairing it by spot welding a plate on top of a hole and then filling areas in with weld. Thankfully I can actually buy these sills on Trademe.
