I guess because the average driver can't be trusted to keep his washer fluid topped up or tyres at the right pressure, so there's no way they'll be conscious enough to manage their own boost. Hence why they're computer controlled, generally. And sure, a lot of enthusiasts would love to control their boost manually, but that sort of person probably isn't that concerned about fuel economy anyway, certainly not enough for a manufacturer to go to the trouble of pandering to them.

I thought it would get in my way at first but in fact it doesn't obstruct at all and it's a shorter path for your eyes than a lower screen. the virtual cockpit is absolutely perfect tho especially when you need the GPS you always have your path in the corner of your eyes.
