Air is used in trucks becuase the nature of the braking system is to lock up or brake when the system fails, making it an excellent failsafe.

However as it has been stated it requires a compressor, and reservoir, as well as being over kill in a car, and not being as precise in control.

Why don't use use water instead of hydraulic fluid?
