You use your dominant hand for fine motor skills, and your non-dominant hand for gross motor skills whenever possible. Now, most people consider shifting gears the fine motor skill, therefore, you should shift gears with your right hand (which is most people's dominant hand). Moving the wheel is a gross motor skill unless you've got an extreme steering rack ratio, which passenger vehicles don't have - therefore, it's best suited to the left hand.
