Ditch the bumpers, do one of several possible brake upgrades (there are guides all over the place), carb/Megasquirt it if the FI gives you any issue whatsoever. Shit's not worth the trouble.
Looks like you got a '77/'78 so the suspension's been nerfed. Eibach makes a spring kit that'll take care of it along with some new shocks.
You should also wire relays into the lighting circuits if they aren't already. I can't remember if they fixed that with the 280s.

I've decided to remove the bumpers, keeping the louvers, drum to disc brake conversion, swapping the suspension, and dropping in a 280zx motor.

The KA24 is a dual cam variant of the 4-cylinder L series. If you take two KA heads and cut one down the center and cut the middle two cylinders out of the other, you get a dual cam L series head that RB cams bolt right onto. You don't have to worry about water passages or welding the sections together if you cut it right, everything goes up and back down for each individual cylinder.
Toyota 4-piston truck brakes marked S15W fit in the front with a bracket. My cousin had Altima disk brakes in the back of his, but I don't recall what he did to make them fit.
2" OD Bilstein strut inserts fit in your strut tubes, but you may have to cut a section out of the tube to shorten it.
