Okay guys, I did it. I bought an MR2. Pic related not mine but same colour. Still need to go through a bunch of bullshit to get the paperwork for it.

What do I do now? I haven't really worked on my cars before, but I'm going to be an aircraft technician and I have some free time, so I'm very willing to learn. Going to pick up a Haynes manual for it.

Don't bother with the Haynes. You need to get the Toyota shop manual for it, aka the Big Green Book. You can find them on ebay and on Amazon from time to time for ~$100
They look like pic related.
You can also find free pdf versions of it if you just google "toyota mr2 repair manual." Should be the first link. The 1988 manual will work fine for the 1986 model.

I heard Haynes is targeted at the less mechanically inclined, which I currently am. Could I just get both and consult the factory manual when I need more info?
Also, which maintenance/installs should I do myself and what should I leave to the professionals if I'm new to working on cars? Don't have a garage but it did come with a jack.

I suppose you can get both, but I personally wouldn't waste the money on a Haynes. The BGB isn't getting any cheaper.
As far as maintenance goes, it's pretty much just like an old Corolla, just with a lot less space to work in. For example just to change the oil you need to jack the car up in the rear to get to the oil filter as it's pretty much impossible to reach it from the top.
Here's the things I would do though:
>spark plugs & wires
>cap and rotor
>oil & oil filter (might need to borrow a friends floor jack and jack stands)
>air filter
>check the coolant, it should be green
>find the diagnostic box in the engine bay. with a paperclip jump terminals E1 and T1. If you have any codes the CEL will flash them for you. Check this vid: https://www.youtube.com/watch?v=Z05olJEWEzU

I've replaced everything short of struts/mounts but it isn't much better so I figured cv joints are the culprit

also cv axles are pretty easy. i did them in my civic so they should be similar (attached to engine or transaxle rather than diff)
