I've only driven the AMG and the 911, and I love both a lot, but the McLaren just makes my dick hard. The 911 and the AMG are (of course) very different to drive. The Porsche will never cease to amaze you with the speed it takes off, and it has a great AWD system, but it depends if AWD is your thing. Throttle response is good, and the PDK is excellent. BUT it's steering is a touch dead. Not like current BMW 3-series dead, but a little bit. The McLaren has the advantage if being mid-engine, like a proper super car, so it has all of your neutral handling goodness. The AMG though, in sport or race mode, just makes you want to hoon like some daft teenager. It won't be the fastest on the track of the three by any means, but it's easy to goof around in.
All three have nice interiors and come well equipped, and none of them will beat you to death driving on the streets. All of them quiet down enough to be good to daily if you're the kind of person to daily something that high-end/fast, but unless you like attention the McLaren might get a bit wearisome there. Looks, the 911 is a 911. Pretty, but expected. The McLaren looks super car, the McLaren is bold. The AMG is probably the coolest of the 3 in the most conventional way. The McLaren is more Lea Seydoux, the AMG is more Jennifer Lawrence. Except manly. In a good way.
All three have good racing heritage. Except for Mercedes and the Le Mans disaster, but that was a while back.

I'd try to find a coach builder in Italy do make me a 60s GT similar to the one in the related pic. Underneath I'd like it to use Nissan tech including an RB engine. Not necessarily because I'm a JDM-fag but because these kind of cars are historically powered by straight sixes.

RBs are reliable, punchy (enough) and sound nice. Probably won't be inside my budget to use an RB26 or some bored RB30 but for me some old RB25 from an R32 GTS-T would be sufficient. Needless to say that I would have the turbocharger removed.
