Sebring is an honest convertible that doesn't look faster than it is, it rides reasonably well, and despite being a ChryCo product it is solid.
The interior on these things is relatively plush considering it was an entry level vert at launch.
Also, it's one of the few cheap convertibles that can actually seat 4 decently well.

Just look at it.
Saab 9-3 convertible is an excellent car if you can keep up with the maintenance.

I'm not saying that the Saab 9-3 is the best convertible out there, but for a thread that has offered a Miata and a Sebring as answers, the 9-3 should easily out-do those.

S2000 is the benchmark for handling and performance of its time.
F-Type is one of the best cars to come out in the last 3 or so years.

The task is finding one that was maintained from the outset.
The GM engines are nice and easy to find bits and pieces for, and having a turbo is nice, but not entirely necessary for the kind of driving you're likely to do in a 4-seat vert, which is simple cruising.

Best cheap/fun convertible: miata
