Yeah, a suburban is probably going to be your best bet unless you can convert an econoline to 4x4 with junkyard parts.
It won't have as tall a roof, but you'll still probably be able to sit up comfortably if you aren't too much over 6 foot.
Just remove the third/second row of seats and you're good to go.
If you can't find a cheap one, just wait until gas goes up a couple cents and there will tons of tradeins from spics that can't afford gas anymore.
An acquaintance of mine bought a military truck (medical truck) and spent about a year modifying it (living quarters and other stuff) and making sure it wouldn't break down after a few hundred kilometers (military vehicles aren't really taken care of that well by their drivers).
After some vehicle registration loopholes he managed to make it street legal. That being said, it still looks like a wheeled tank or APC when driving down the highway (can't go faster than 110 km/h though, but will go anywhere - literally).
Currently he is somewhere in Norway I think, driving around with his wife.
