Chevy Lumina. If you know where to look it's got lots of aftermarket support thanks to its sister cars.
They made over a million of them so they're everywhere and cheap.
They're bulletprood reliable.
It's even got a complicated IRS so if you want, you can make them handle great.

granted it will always look like a bland grandma car and have shit a shit interior, but that's part of the appeal.

Things were decently reliable before the mk4 Golf and B5 Passat. That's where electrical issues and weird design decisions became a big problem.
They're fairly easy to work on though, definitely not as bad as certain French cars of the time.
