Probably medium. I usually wear medium t-shirts. I tried on the medium and large jerseys when I went to Podium's irl place. The medium is a nice tight race fit on me. The large is a little bigger but even that fit me fine. I expect small would be too small for me.

You mean pockets? Yes, it will still have pockets. The gold and silver will be pretty skin tight, but not like compression clothing; just a very close-to-skin fit.
Club fit (like the bronze jerseys) is just a more relaxed fit, but it's still moisture-wicking material, cycling jersey design, etc, just not a super slim fit. It definitely won't be like a t-shirt.
By what you described, you would probably be very happy with a bronze jersey.
