In this case and for White Knight 2 its because they will carry large objects that need to be dropped mid-flight.

Keeping the payload in the middle is good for balance. Attaching to a wing gives good ground clearance. Making a huge bomb bay would mean a lot of extra vehicle weight that is unnecessary for its primary mission. Plus if they are using liquid oxygen, you want that to freely vent rather than building up in a confined space.

My guess is that the wing is designed to flex considerably and they didn't want to have to figure out how to compensate for that in the tail.

well, the problem is more complicated than that.

there is indeed a rolling moment, but its center of application is all wrong.

Usually the rolling moment is supplied by the ailerons and coincides with the wing. However, here there is a more significant twisting moment imparted to the wing by the ascending and descending elevators, located at the end of a long moment arm (the booms).

Even if the twisting itself wont rip the wing apart, the assymetrical aerodynamic loading appearing as a result of the uneven airfoil deformation surely will.

For simplicity it makes sense to use a common design for both sides, but without seeing inside it is impossible to tell if it even has 2 cockpits. One side could be dedicated to support crew for the rocket drop.

Early renderings of the design had no windows on the left side. Hell they might even just be painted on to give it a symmetrical look.
