Newflash: You can have just as high a gear on an 80's road bike as you can on a modern bike. They're just a little extra weight, which is only a real disadvantage during acceleration and hill climbing. Considering the extra weight you probably carry in your ass, and the small size of you legs, you've lsot the weight advantage.

As for how much change you can make to a bike before it's no longer an OTS, that's a Ship of Theseus dilemma. Personally, I'm willing to accept any bike that still looks and rides pretty much the same, as it did when the frame was new in 1975 as an OTS. An old steel frame with a 2x11 drivetrain and indexed DT or bar-end shifters? OTS. 2x10 with brifters, or with a modern aero wheelset? Not an OTS.

i'm not completely sure. I have a french bike from the 80's, i did put a 130mm wheel (you can do this alone by hand) and a 8 speed cassette but the smaller cog is unsusable. When the chain is on the smaller cog it rubs on the frame and block.
Also you need to change the derailler because the range is not the same (obviously).
haven't ridden it in a while, but it was my first real bike so I'll never sell it
