That's cool, but I just got full Claris shit except crank arm/chainrings.

My front shifter has 3 click stops, but I only have 2 gears. Is it possible to get the new Claris 3x front and use my old shifter?

Quite possibly with a bit of tinkering, I dont know much about triple setups. Not sure if they are rated to 9 speed only on this new claris

No. That's a trim step. You have one position for the smaller ring and two positions on the larger ring. You use them to trim out chin rub when cross-chaining. The step is much too small to be used for shifting.
A triple shifter would have four to five steps; two/one for the smallest ring, one for the middle ring and two for the large ring.

It's cool these lower end sets constantly improve, but the current "pro" Shimano groupset look is fugly imho

And also that's not always true. Tourney for example has three click stops for a triple ring. My Claris bike has two click stops for the double.

Upon further inspection, my left Claris shifter has one big jump, and a small trim step for EACH the low gear and the high gear. I never noticed the low one before because I just mash down on the switch hard when I'm coming to a stop
