I know what you mean, and I know that industries like to push things for profits, but if you look at the recent evolution of TT bikes it is quite clear that real aero science came into bike design only recently.
And if the pro peloton start using 28mm, you can say that 28mm is indeed beneficial. They take any small advantage they can I would assume.

1x isn't a meme. The simplicity is nice. You shouldn't be cross-chaining if you have the right gear range. You don't need gearing for 60km/h when you rarely go above 35km/h on the trails. Run the appropriate sized chain ring so you're mainly using the middle of the cassette.

It's proportional to your weight. you want a certain amount of rim drop when you sit on the bike, meaning if you weigh 200 lbs you'll have to put your 23s up to 115psi and youll feel every spec of dust on the road. Like wise, if your a tiny person at say 110 lbs, you'll be fine on 23's
