They do.
Within months after they entered service in 1968, they were retrofitted with large grab rails with pantograph gates to allow passengers to safely traverse between cars.

These are all old photos. Nowadays the NYC subway system is quite clean and the graffiti is all but gone.

Fun fact: the oldest segment of right-of-way used by the NYC Subway was opened in 1864 (it's on the West End Line at ground level right before crossing Coney Island Creek). That means the NYC Subway system is officially over 150 years old!
