Has anybody tried these baskets? I want to improve my bike's carrying capacity, but those panniers seem too expressive for my wallet and taste. I'm not planning any long touring trips for a while, I just want some to carry groceries and other stuff.
The Amazon reviews are mixed, with some complaining of the baskets rattling and not being easy to close.

They do rattle and they get hard to close when they get rusty. What did you expect from folding baskets?
They do what they're supposed to do.

Just get a steel dept store handlebar basket and hang it off your bars or do what I did, hang it off the side of your rack and ziptie it

I've already got a bag there. Hold some maps and my cheap secondary cable lock.

Zip tie is no good. Did that once. Hit a bump loaded and the basket fell off

Then you either did it shitty or have shit ties.
Two loops for each of my hands could EASILY hold my body weight hanging.
Though, as an added option, I did for a time have a milk crate attached to a flat back rack using hose clamps.
In fact, when it comes to gerryrigging shit, hose clamps are one of my first go-to's.
Buy some.

They work and all but they're heavy, noisy, and you will have to spray some WD40 on the hinges every couple months or so.

some zip ties don't hold up to the elements and become brittle
I zip-tied my QR skewers to prevent theft when I was a 22 year old retard
