Because its a good album and 21 Century Schizo Man is one of their most accessible. Red isn't more accessible unless your a metalfag, discipline is more poppy if your a new wave fag. But this appeals to everyone.

I imagine because it was their highly influential debut, and that is more or less popularized prog rock.
I'm not going to go so far as to claim it was the first prog rock album, but it's certainly one of the first.
