The only pop part is the structure. But even then, 95% of music would be pop as most modern western music follow verse-chorus-verse

There's always The Beatles. Nearly all songs by them have some interesting stuff going on at times, yes, even I Wanna Hold Your Hand which is probably their most boring song.
