Baroque music lacks harmonic, rhythmic, and dynamic variation.
Romantic covers all of those but forsakes Baroque's melodic variation.
20th century and beyond is what's good in the realm of western art music along with post-bebop forms of jazz, all experimental music after WW2, and whatever forms of pop brings the kind of bangers you prefer.
If you can't appreciate Bartok or Shostakovich you should be questioning your critical listening skills

It does though. Baroque's obsessed with V -> I ends to progressions often with trills, it's counterpoint polyphony always has a very straightforward second melody, and there's non-existent dynamics in the music.

there's loads of dynamics in baroque music, there are some genres like keyboard work that were restricted for technical reasons which may lead you to believe otherwise
baroque music had more adherence to cadential formulas but it had plenty of chromaticism. and voice leading was much more controlled than in the romantic era, but there were experimenters. bach is not the only representative example
