Depends which direction you want to go. More or less experimental. I'd say Mule Variations is a good one to jump to. It's later Tom Waits while not being entirely inaccessible to new fans like some of his experimental stuff is. Has really easy listening songs that you could have found on earlier albums like Hold On too.
