Stankonia would be the best starting point, one of their best albums and definitely their most accessible for newcomers

After that go to Aquemini and ATLiens, then Southernplayalisticcadillacmuzik, then their 2 weakest albums Speakerboxx/TLB and Idlewild, skip Idlewild if you want to, you won't be missing much.
